These ribs go by many names - most have to do with the sheer size of the bone. They measure anywhere from 8 to 12 inches in length. Same meat as the short rib and maui rib but instead of cutting across the bone for short lengths, the bone is left whole and each rib is a serving all on it's own.
The smoker is the way to go with this cut - that will give you the fall off the bone, tender ribs you're looking for. A slow oven will do in a pinch too!
Each package contains a plate of 2 to 3 ribs.
